If you're like me, you've probably wondered what deal was with Weasel's SLIDEways character and 'gummy cake'. So I tracked down a recipe.

Ingredients:

# 2 Sticks unsalted butter,room temperature
# 2 Cups sugar
# 6 Eggs
# 1-1/2 Cups Milk
# 1-1/2 Cups Water
# 1 Pound Sweet Rice Flour
# 4 ounces Flaked Coconut



Method:

# Preheat oven to 325 degrees
# Grease an 8x10x2" Glass baking dish with 1 tablespoon of butter.
# In a bowl,beat remaining butter with sugar until light and fluffy.
# Add eggs,1 at a time,beating well after each addition.
# In a large measuring cup,combine milk and water.
# Divide rice flour into 3 batches.
# Add one-third flour to batter,stir well.
# Add half of liquid and stir in before adding another one-third of flour.
# Stir to blend.
# Add remaining liquid,blend,and then add remaining flour.
# Stir until batter is smooth.
# Fold in 3 ounces of coconut.
# Pour batter into baking dish,bake 10 minutes.
# Remove from oven,sprinkle remaining coconut evenly over top.
# Return to oven and continue baking until top is light brown,about 50 minutes longer.
# Remove cake from oven and let cool completely.Cut into squares to serve.

Or hit with mallet, I guess.

I make no promises in that regard. :)

I'm still not sure about the mallet business. At the risk of being unauthentic, I'd try and cut it with a knife.

A quarter pound beyond that I am not doing the conversions, I am too lazy. That cake sounds really delicious for especially for us Celiacs. :D

Butter is sold by sticks here, 4 per box = 1 lb

1 stick of butter = 1/4 pound
1 stick of butter = 1/2 cup
1 stick of butter = 8 tablespoons
1 stick of butter = 4 ounces

Makes baking much easier

Ah, so a cup is 8 ounces! I've always wondered.
Thanks, Lindsay. I do most of my baking in tablespoons and blobs. :)
